Vino Underground opened in 2012 in a vaulted brick cellar on Galaktion Tabidze street in Sololaki, a few steps from Freedom Square. It was started by a group of Georgian natural winemakers, among them Soliko Tsaishvili of Our Wine, Ramaz Nikoladze and John Wurdeman of Pheasant's Tears, who wanted somewhere in the city to pour their own wine.

It was Georgia's first dedicated natural wine bar. The list runs to around a hundred family-made wines, most fermented and aged in qvevri, the clay vessels Georgians bury in the ground. In Georgian, they say, you don't “make” wine: you “raise” it.

The founders have since handed the cellar to a group of wine lovers who run it together. It still pours small Georgian producers, with cheese, sourdough and fried sulguni, and live music some nights.
